News and Noms: Kale Chips

…Moving on to the kale!



Did you know that kale has more iron per calorie than beef? Yep. And it’s a leafy green: that’s always a good thing. So what if I told you that you could have all of this green goodness in the form of a chip? That’s what I thought. This recipe of kale is devised from a particularly good choice I made one day while ordering food from Sideboard.


Kale Chips

  • one head of fresh green kale
  • two Tablespoons butter
  • one-third cup cooking oil
  • one teaspoon salt
  • one teaspoon pepper
  • two teaspoons Mrs. Dash

1/Preheat oven to 400 degrees on the baking setting//2/Chop fresh kale into salad-sized pieces//3/Heat butter, oil, salt, pepper, and Mrs. Dash in a pan over low heat//4/Add kale to the pan and coat in the butter mixture//5/Stir over low until all kale is completely coated in butter mixture and reduced slightly//6/Transfer the kale to a Pam-sprayed baking sheet, making sure that each piece of kale is separated from the rest and flattened so it will properly crisp//7/Bake kale, checking it at five minute increments until crispy!
